Ugly Banana Oat Cookies

This recipe is foolproof and tasty and a good way to use up slightly too ripe bananas. It comes from Ali_31 on WVD Forum. They may not be pretty but they are really tasty and very sweet though sugar-free.

Ingredients

  • 3 large bananas
  • 1 cup chopped dates
  • 2 cups rolled oats
  • 1/3 cup cooking oil
  • 1 tsp. vanilla extract

Method

  • Preheat oven to 180C/350F/gas mark 4.
  • In a large bowl, mash the bananas. Stir in oats, dates, oil and vanilla. Mix well and let set for 15 minutes.
  • Drop by teaspoonsful onto an ungreased cookie sheet/baking tray.
  • Bake for 20 minutes or until brown.
