satay sauce

This sauce is a great way to make an exciting tasty meal with a good extra protein element, which skiers always appreciate.

You can vary the ingredients a fair bit, but the key elements are the peanut butter, garlic, some Asian spices, the fruitiness and some ginger or lemon juice.

Ingredients

  • jar of peanut butter
  • apple/pineapple juice or 1 apple chopped small or fruit puree
  • olive/sunflower oil
  • 3-4 tablespoons tomato ketchup or BBQ sauce
  • ginger grated or powder, and/or juice of 1/2 a lemon/lime
  • finely chopped fresh garlic
  • mixed spices and/or ground coriander
  • chilli/pepper
  • soya milk and/or soya cream if you like to make it more creamy

Method

  • Heat garlic and spices in oil and then stir in everything else, stirring regularly and thoroughly
  • Add more juice / soya milk to thin as necessary

Notes

Serve with any savoury where it makes sense, such as tofu and vegetable kebabs or salad (gado gado), with a starter or main dish.

Leave out the chilli if making it for a group which includes kids.
