Ingredients
- washed and chopped potatoes
- olive oil or vegan marg
- soya cream/milk
- freshly ground black pepper
- optionally: chopped watercress, chives or spring onions
Method
- boil potatoes until soft but not collapsing
- drain thoroughly
- mash with the oil/marg and soya cream/milk
- for a special touch, mix in plenty of coarsely chopped watercress or chives or spirng onions just before serving.
