Banana Bread Pudding
An incredibly easy dessert using up ripe bananas and dry bread and making them delicious. I invented this in Tignes, with all ingredients easily available in the Sherpa mini supermarket.

Coconut Cream Pie
Beautifully simple. Comes from Leah Leneman's excellent book "Easy Vegan Cooking", which if you can get hold of it is a must have.
If you don't have soya dessert (this is quite widely available in most countries), then it is simple to make your own using either vanilla soya milk or sweetened soya milk and vanilla essence/powder, heated up with some a well whisked in table spoon of corn flour until thickens, stirring continuously.

This was invented by our host James at Ski Beat's chalet Marmotton on the Veggie Snow trip Feb 2006. His partner, Sammy, said she much preferred it to the non-vegan version and loved it. It's basically bread and butter pudding French vegan style.

Now and Zen Almond Shortcrust Pastry
A great sweet nutty pastry which beautifully compliments fruity and creamy desserts.
Make the pastry dough in advance and chill it for several hours before you roll it.
If you don't have almonds, try another nut like pecans or cashews, and maybe some sesame seeds, finely ground.

It makes me want to get hold of a copy of "The Now and Zen Epicure Cookbook," by Miyoko Nishimoto Schinner too, as this recipe originates from there. The method is an approximation of the original apparently.
