Coconut Cream Pie

Easy Vegan Cooking

Beautifully simple. Comes from Leah Leneman's excellent book "Easy Vegan Cooking", which if you can get hold of it is a must have.

If you don't have soya dessert (this is quite widely available in most countries), then it is simple to make your own using either vanilla soya milk or sweetened soya milk and vanilla essence/powder, heated up with some a well whisked in table spoon of corn flour until thickens, stirring continuously.

Ingredients

  • 500ml carton vanilla soya dessert (custard)
  • 85g/3oz/1 cup dessicated (shredded) coconut
  • 1 pre-baked flan base

Method

  • Heat vanilla dessert gently to boiling point. Simmer for a few mins, the remove from heat and stir in the coconut.
  • Leave mix to cool for a few mins, the pour into flan case and refridgerate until ready to serve.
  • Serve with soya cream.

Notes

Pastry

In most countries some ready-made pastry is free from animal products. The fat used is the issue. If this is vegetable-based and there are no other animal ingredients you'll be fine with it. In the UK frozen and chilled pastry that does not plaunt itself as butter pastry is often vegan, particularly Jus Rol and some Saxby's pastry.

You can make the pastry yourself to make it extra tasty and to save hunting for potentially elusive ready-made vegan pastry. Just choose one of the pastry recipes on this website.
