Black Forest Gateau

A yummy recipe from Karen, expert vegan skier.

Ingredients

  • cake* 240g Self-raising flour
  • 250g sugar
  • 3T cocoa (or more if you want!) (unsweetned)
  • 2 t bicarb soda (or baking powder is fine instead)
  • pinch of salt
  • optional chipped vegan chocolate (eg Lindt Excellence) and walnut pieces
  • 225mL soya milk (plain or flavoured)
  • 100mL sunflower/vegetable oil
  • 3t cider vinegar or white wine vinegar
  • vanilla essence or powder
  • filling* 1 tub whipping soy cream (or home-made equivalent - see faux dairy recipes) or dairy-free cream cheese
  • Thawed or fresh raspberries, or preserved pitted cherries
  • Chocolate slivers (use a potato peeler to shave a block of vegan chocolate)
  • icing - in right proportions to cover top of cake and taste nice!* vegan margarine
  • icing sugar
  • cocoa
  • topping* dessicated coconut and slivered almonds and more fruit

Method

  • Pre-heat oven to 150*C. Grease and line sandwich sponge cake tins using vegan margarine.
  • Mix dry ingredients together
  • Mix wet ingredients together
  • When oven is hot enough, addmix wet and dry together thoroughly but do not beat.
  • Put into tins and bake straight away until skewer comes out dry.
  • Turn out when cooled for about 5min and let cool completely before icing.
  • Put filling and sandwich the cake just before serving.

Notes

If you like alcohol a little cherry liqueur or kir (if they are vegan) in the cake mixture would make it even more like black forest gateau.
