Black Forest Gateau

Ingredients
- cake* 240g Self-raising flour
- 250g sugar
- 3T cocoa (or more if you want!) (unsweetned)
- 2 t bicarb soda (or baking powder is fine instead)
- pinch of salt
- optional chipped vegan chocolate (eg Lindt Excellence) and walnut pieces
- 225mL soya milk (plain or flavoured)
- 100mL sunflower/vegetable oil
- 3t cider vinegar or white wine vinegar
- vanilla essence or powder
- filling* 1 tub whipping soy cream (or home-made equivalent - see faux dairy recipes) or dairy-free cream cheese
- Thawed or fresh raspberries, or preserved pitted cherries
- Chocolate slivers (use a potato peeler to shave a block of vegan chocolate)
- icing - in right proportions to cover top of cake and taste nice!* vegan margarine
- icing sugar
- cocoa
- topping* dessicated coconut and slivered almonds and more fruit
Method
- Pre-heat oven to 150*C. Grease and line sandwich sponge cake tins using vegan margarine.
- Mix dry ingredients together
- Mix wet ingredients together
- When oven is hot enough, addmix wet and dry together thoroughly but do not beat.
- Put into tins and bake straight away until skewer comes out dry.
- Turn out when cooled for about 5min and let cool completely before icing.
- Put filling and sandwich the cake just before serving.
Notes
If you like alcohol a little cherry liqueur or kir (if they are vegan) in the cake mixture would make it even more like black forest gateau.
