Ingredients
- plain, spelt or wholemeal flour (eg 2 cups)
- vegan margarine (eg 3/4 cup)
- pinch of salt
- optional 2 teaspoons of dried herbs for savoury dishes
- cold water (ideally chilled)
Method
- Mix flour with about on third that volume of vegan marg.
- Rub into fine crumb texture.
- Slowly add cold water mixing in thoroughly with hands, until dough-like, but not too sticky.
- Keep in fridge until needed.
- Roll out on floured surface, fit to flan case or pie dish
- For flans, prick and part-bake at about 180C until crispy but not browned (15-20mins).
- For pies, cover filling with the pastry, brush with soya milk and bake at about 180C until gently browned.
Notes
You can make your own pie up - just make a nice stew of beans/lentils and vegetables, top with pastry and bake.
