Rich Fruity Pancakes

We've got a basic pancakes recipe, but you may want to do something even more tantalising. Here's the recipe for you.

You can vary the recipe hugely with different fruit, and even use pumpkin or squash puree. 

For savoury versions how about mixing in chopped fresh herbs and black pepper, serving with houmous or soup and salad for an exciting starter or light meal?

Ingredients

  • 1 very ripe banana
  • 1/2 cup apple puree (or other fruit/pumpkin puree)
  • 1 cup soya milk
  • 1 tbsp vegetable/olive oil
  • 1 cup flour (try oat flour or buckwheat for a wheat-free alternative)
  • 2-3 tsp baking powder
  • pinch of salt
  • 1 tsp mixed spice (or use whatever you have of nutmeg, cinnamon, ginger)
  • optional chopped fruit, or small berries

Method

  • Mash the banana and mix in the other wet ingredients and the salt and spices.
  • Mix in the flour and baking powder. Optionally, fold in the chopped fruit or berries.
  • Pre-heat a frying pan or skillet with a little oil, and dollop in and spread the batter to the size you want when the pan is medium hot.
  • Fry on both sides until browned but not burnt.
  • Serve and garnish with whatever you like, such as fresh fruit, soya cream, soya yoghurt, nuts, seeds, lemon juice, maple syrup, peanut butter, etc.

Notes

The photo used here is of a similar recipe using pumkin puree and pumpkin seeds and also adding in some agave syrup for added sweetness.
